
Ingredients:
For the cookies
- 1 Cup softened butter
- 1/2 Cup Powdered sugar
- 1 Tbsp Lemon zest
- 2 Tbsp Lemon juice
- 1 Tsp Vanilla
- 2 Cups Flour
- 1/4 Cup cornstarch
- 1/4 Tsp Salt
For the glaze
- 1 Cup Powdered sugar
- 2-3 Tbsp Lemon juice
- 1 Tsp Lemon zest (optional)
Directions:
Beat softened butter and sugar until light and fluffy. Add lemon zest, juice and vanilla and mix until well combined.
Add flour, cornstarch and salt and mix well.
Roll dough into a log about 2″ round, wrap in plastic and place in the fridge for 20-30 minutes.
Preheat oven to 350ºF and line baking sheet with parchment.
Remove the dough from the plastic wrap and cut into slices of desired thickness. Place on parchment line baking sheet and bake for 10-12 minutes or until edges start to turn golden brown.
Remove from oven and let cool completely.
For the glaze, combine ingredients and drizzle over the cooled cookies.
