Pullman Bread

Ingredients:

  • 4 Cups flour loosely packed
  • 1¼ Cup + 1 Tbsp Water
  • 1 ½ Tsp Yeast
  • 3 Tbsp Sugar
  • 1 ¾ Tsp Salt
  • ¼ Cup room temp butter

 

Directions:

  1. Combine warm water, yeast and sugar.  Let sit until the yeast is activated (about 10 minutes)
  2. Add flour and salt to a stand mixer and knead the dough until it pulls away from the sides
  3. Add butter in 2 batches until fully combine
  4. Put in an oiled bowl and let rise to double in size
  5. Spray the inside of the Pullman pan and lid with cooking spray or rub with butter
  6. Punch down the dough and place it on the countertop.  Shape into a rectangle the size of the loaf pan.  Roll up and place in Pullman loaf pan
  7. Allow to rise to 50% of the pan then heat the oven to 375ºF
  8. Once the dough is about an inch from the top, place it in the oven and bake for 35-40 minutes
  9. Allow to cool for 10 minutes then remove from pan and place on cooling rack.
