Yogurt Muffins

Ingredients:

  • 1 Cup plain or flavoured yogurt
  • 1/2 Cup Apple sauce
  • 2 Eggs
  • 1 Cup rolled oats
  • 1 Cup flour
  • 1 Tsp Baking soda
  • 1 Tsp Vanilla
  • 1/2 Tsp Baking powder
  • 1/2 Tsp Salt
  • 1 Cup Sugar
  • 1 Cup berries of choice (optional)

Directions:

  • Pre heat oven to 350°F and spray muffin tin
  • Mix all ingredients until well combined
  • Portion out into prepared muffin tin
  • Bake for 25 – 30 minutes or until toothpick comes out clean

Options:

  • Depending on flavour of yogurt used you can change the berries to chocolate chips and nuts or lemon zest, etc.
  • For coffee flavoured yogurt, use Bailey’s chocolate chips
