Lemon Curd

 

 

Ingredients:

  • 3 Lemons – Juice and Zest 1/3 cup plus 1 Tbsp
  • 2 Tbsp plus 1 ½ Tsp Honey
  • 3 Tbsp Extra virgin olive oil
  • 1 Large egg room temp
  • ¼ Tsp salt

 

Directions:

Zest and juice the lemons until you have approximately 1/3 cup of juice and 1 ½ Tbsp of zest

Whisk together honey and oil in microwave safe bowl.  Then add egg, lemon zest and juice and salt.  Whisk until smooth.

Microwave at 50% power for 1 minute.  Remove and whisk and scrape down the sides.

Continue to heat at 50% power for 30 second intervals and whisk until custard coats the back of a spoon.

Strain (if you want) into a sealable jar and let cool to room temp before putting in the fridge.
